We hear often enough that people are curious about what/how our family eats. We finally kept a record for almost two weeks of what we had for dinner each night. Enjoy reading it! We hope you like this little peak into our life in our kitchen. We’ve listed what vegetables of ours were included, as well as items from other local businesses.
Tuesday: (brought to eat @ a swim meet) Mushroom Pasta with Chard & Cream Sauce, Tomato Relish [Chard, Garlic, Tomatoes, Bombolini Pasta]
Wednesday: Cabbage & Sausage, Tomato Relish, Green Salad [Cabbage, Scallions, Tomatoes, Garlic, Parsley, Salad Mix, Cucumbers]
Thursday: Vegetable Stir Fry, Rice, Green Salad [Squash, Zucchini, Carrots, Potatoes, Chard, Broccoli, Scallion, Garlic, Salad Mix]
Friday: Grilled Salmon, Green Salad, leftover Veggie Stir Fry from previous night [Salad Mix, Cucumber, Cherry Tomatoes]
Saturday: Onion/Alfredo Sauce/Soup (our 9 year old made up this recipe), Caprese Salad [Onions, Garlic, Tomato, Basil, Fresh Mozzarella from St. Stephens vendor]
Sunday: Tacos [Peppers, Tomatoes, Cilantro, Onions, Lettuce Garlic, Greek Yogurt from Old Church Creamery]
Monday: Baked Beans with Microgreens mixed in (??!! Our 9 year old made this recipe up.), Green Salad [Microgreens, Salad Mix, Cucumbers]
Tuesday: Barbecue Brisket in Lettuce Boats, Cucumber Salad [Lettuce Mix, Cucumber, Dill, Brisket from Elim Springs Farm, Tomatoes]
Wednesday: Potato Latkes, Green Salad, Butter Carrots [Potatoes, Scallions, Salad Mix, Cucumbers, Carrots, Tomatoes]
Thursday: Pan Roasted Beets & Carrots with Goat Cheese, Rice, Green Salad [Beets, Carrots, Salad Mix, Tomatoes, Goat Cheese from Goats R Us, available at the Brandermill Green Market]
Friday: Baked Curried Eggplant & Squash, Tomato Relish, Green Salad [Eggplant, Squash, Tomato, Garlic, Onion, Salad Mix]
Saturday: Potato/Corn Cakes (again…made up recipe by our 9 year old), Rice & Beans with Salsa, Green Salad [Potatoes, Tomatoes, Garlic, Cilantro, Onions, Salad Mix]
And just for fun…Pictured above is what bees do when it’s hot…too hot in the hive for their thousands of bodies…they congregate on the outside of the hive. It’s quite a sight. (Photo credit: Our 9 year old child.)
This week’s harvest includes:
Basil, Cilantro, Eggplant, Green Beans, Kale, Microgreens, Parsley, Salad Mix, Summer Squash (yellow and zucchini), Tomatoes…and our Organic Bread .
2016 Market Share CSA Members: Reserve your selection online to pick up Saturday, July 9th at our farm, at the Brandermill Green Market, or at the Farmers Market @ St. Stephens. (Everything remaining after pre-orders will be available for purchase at the Brandermill Green Market and at the Farmers Market @ St. Stephens.).
Recipe Suggestions:
Potatoes – Potato Salad by Bon Appetit, Best Hash Browns by same
Summer Squash – Slice lengthwise and marinate for an hour in olive oil with salt and garlic. Perhaps add shredded basil. Then grill or roast/bake in the oven. Bake at 375-425 degrees until desired softness (15-20 minutes).
Sweet Peppers – We dice these and add to tomatoes/garlic/olive oil/salt for a tomato salad/relish type dish, or any variation of salsa. We also slice them into long strips/boats and fill them with organic cream cheese, trying to prepare them as fast as the children eat them. Or, include them in any stir fry, roast in the oven, or grill (brush with oil and salt).
Tomatoes – If Caprese Salad, Tomato Sandwiches, Salsa, and Tomato Relish (described above) don’t finish off your tomatoes, try Bon Appetit’s Tomato suggestions: Grated Tomato Sauce, Roasted Salsa, Dried Tomatoes with Mozzarella.
Onions – First, add to anything (salsa, stir fry, etc.) Or make Easy Onion Dip by Bon Appetit, Charred Onion & Cucumber Salad
Eggplants – Smoky Baba Ghanoush by Bon Appetit, Curried-Marinated Eggplant by same (we had this over the weekend and it was wonderful)
