Wednesday’s Farm Share will most likely include:
Carrots! (finally), Salad Mix, Kale, Arugula, Escarole, Green Tomatoes, Hearty Greens, and Radishes
Recipe Suggestions:
Escarole – This is the likely unfamiliar vegetable in this week’s share. It is best when cooked, as it beautifully takes on the flavor of the broth. It is a traditional Italian soup ingredient. Escarole and Bean Soup, or Escarole Soup with Garlic. We heard from one happy customer that added Escarole to chili last week and loved it, so feel free to improvise.
Green Tomatoes – We love Curried Green Tomatoes and there are a multitude of recipe options. Basically, add diced green tomatoes to any curry recipe that you like and they contribute a delightful tartness and crunch. Try also Shrimp and Green Tomato Curry and feel free to use whatever protein you prefer.
Carrots – You likely need no suggestions, as they are so wonderful just eaten raw, but when we cook them we love keep them whole or sliced once lengthwise and cooked on the stovetop with a bit of butter, salt, and pepper. Perhaps add honey or maple syrup as in this recipe for Maple Pan Roasted Carrots.
Salad Mix – If you’re in a rut and need a dressing inspiration, remember that everything is divine under homemade Ranch dressing (we use yogurt instead of sour cream)
Kale – This time of year we usually cook kale, or put it in soup, rather than eating it raw. Lentil, Sausage, Kale Soup. or our favorite: Portugese Kale Soup (except we use turnips instead of potatoes and we don’t add garbanzo beans…remember you can make the recipe fit your preferences!)
Radishes – Radishes are great with any green salad and they are also wonderful when complemented with fat and salt. Combine them with any cheese to get a mix of flavors and textures. Try it with Ricotta, or Pesto & Radish Crostini.
Hearty Greens Mix – In case we haven’t suggested it recently enough, we love these greens in smoothies and mixed in with scrambled eggs or quiche and in soup and mixed with our tender salad greens!
