Leafy Green Lasagna. Because there are now greens to harvest but also still tomatoes.
(Though the tomatoes are in short supply for us at this point…Leaf Mold has taken out most of our tomato plants. There are a host of chemical fungicides to kill this pathogen, but we don’t use those products. Instead, we have fewer tomatoes. We think it is an appropriate trade off.)
Peppers & Tomatoes – Vegetarian Chili is easy to modify based on your diet and preferences. Add meat and cheese if you eat those. Add different vegetables based on what you have on hand.
Arugula – Beet & Goat Cheese Salad with Arugula is our favorite way to enjoy this green (though our beets are not yet ready to harvest). Arugula Prosciutto Pizza is another stellar option. Or try Goat Cheese & Arugula over Penne.
Eggplant – (not pictured) Baked Eggplant is a simple recipe with slices of tomato baked on top of slices of eggplant. This works well with our larger, round, Italian variety. Crispy Baked Eggplant is another winner. It is a breaded version and works with the larger eggplant or the miniature eggplant.
Cucumber – One variety we are now harvesting is a long and sometimes curled Asian cucumber variety. Its flavor is great, with a different outside shape and look.
Saturday’s & Monday’s Farm Share will most likely include:
Salad Mix, Arugula, Kale OR Chard (the opposite of what you received last week), Beans, Sweet Peppers, Cucumbers, Tomatoes, Eggplant.
This week’s harvest (and baking) includes:
Arugula, Beans, Chard, Fairy Tale Eggplant, Flower Bouquets, Jalapenos (non-spicy), Kale, Microgreens, Okra, Shishito Peppers, Sweet Peppers, Sage, Salad Mix, Spearmint, Thyme…and our Organic Hearth Baked Bread (Roasted Pepper and Onion, Whole Rye, Raisin, Baguettes, & Seed loaves for this weekend)
